La mise à jour de cet ouvrage permet d'approfondir notre réflexion sur les répercussions du modèle agricole actuel sur l'environnement et la biodiversité, et sur le coût humain relié à l'exploitation de la main-d'oeuvre dont on parle trop peu, mais qui rappelle malheureusement le temps de l'esclavage. L'auteure démontre ainsi les rouages d'un système alimentaire qui ne tourne pas rond.
